In travel blogs, which mirrors life, people prefer something more grand. They say bigger is better. But this is not necessarily true. Sometimes things that come in tiny packages are better . . . and tastier. Take Bibingkinitan for instance.

The usual problem with delicacies subjected to mass marketing is the deterioration of taste. We often say it’s commercialized. Even cooking lessons distinguish between “commercialized” and the regular version of a recipe. No wonder that we used to simply pass by Bibingkinitan in kiosks found in various malls. Why would I stop for a bibingka that we could enjoy outside, at a lower cost and with a taste we already know?

Then one afternoon somebody brought a box of Bibingkinitan for afternoon snacks. It smelled like cheese heaven. It’s not toasted, but not too soft. There’s a constant struggle between sweetness and saltiness, the sugar versus the cheese and salted egg. If the world has this balance, then we’ll have, ahem, world peace. It’s mini size means it’s easier to eat than the bigger alternatives, like Ferino’s.
I’m a believer since then.
